I have a weakness for peach cobbler with vanilla ice cream...
My favorite dish is fried chicken, biscuits, home grown tomatoes, and gravy... (the gravy covers everything....)
It must be lunch time...

No Gravy!
Culcanon..it is an Irish dish. Irish comfort food to the maximum.
Steam potatoes (any Irishman wil ltell you that you do not cut the peel off the potatoe before cooking because that is where all the "goodness" of the potatoe is, and you never boil them; they are always steamed and then peeled).
Cut up and boil a head of cabbage but don't let it get mushy, it should still crisp a little. Save the broth.
Use some of the broth and some cream (not milk, this is COMFORT FOOD not diet food) and tons of butter and some salt to mash the potatoes.
Add the cabbage and mix and top off with another really big slab of butter.
On a cold night. There is NOTHING better.

I forgot the ham!!!! Ham and cabbage and potatoes. Use a good picnic ham that has been smoke seasoned. Cut little peices of it and mix in when you add the cabbage.

For morning I like homemade biskets and gravy and fried eggs with ripe tomatoes.
Diner beans and cornbread and pokesaled and deer meat. It's good stuff.

Baked Zucchini.......large ones.....sliced in large circles. Place on a cookied sheet that has edges. Sprinkle with garlic salt or powder on each one. Add a think slice of cube butter pat to each one.....sprink with grated Parsman cheese....and place crushed potato chips on top and bake at 350 for 30 min.....Oh, yummmmmmmmm. Served with Baked Chicken with butter and rosemary....and fresh seamed string beans.....with backed potatos. Winter or summer....it's good.
