Full Version: Too Late For The Harvest

Due to circumstances beyond my control, I found myself a little short this month (my son put a golf ball through my neighbors rv window). I am fine, I have gas in my car and plenty of food. My son doesn't always have the best diet, but I try to make sure that he eats lot's of fruit. I realized that we were out of fruit and thought, "what can I do?" That's when I remembered that the apple tree still had lot's of apples, it's a very late ripening apple tree, usually they don't get ripe until the very end of October. I went out there and there were still hundreds of apples on the tree, so I went and got a cloth grocery bag and filled it up. At this stage of the game, many of them are worm eaten, deer eaten or have big holes in them from birds eating them, so I had to throw every other one away but there was still plenty of apples that were good and I gathered enough to make a gallon of applesauce. These apple get sweeter after the cold and it was the best applesauce I ever made, the taste is incredible, sweet and spicy (I added very little sugar and no spice) just a wonderful taste sensation. Just when you think it is too late for some people to make the harvest, remember some of the very latest ones will have the sweetest taste.

Thank-you so much for this wonderful thread...such an inspiration! And yes, we must never ever give up on people, all too often God works in mysterious ways. Sometimes the best and sweetest witnesses for Christ are those that just found the Lord recently. God always has a plan.

I know what you mean about the apples. This has been the best year in the 3 years l've been here. We have transparents. They are redder and sweeter than they've ever been. Many animals have been feasting. Don...do you know how many women in any given church would love to feed you and your son?...Not only that but some people need to serve in that capacity more than you need to recieve it. Maybe you ought to do some women a favor..

This also reminds me about a word God gave me about the 'strongest runners'. The men that should be on the frontlines but aren't...In some cases the women leading the show. But prayers are finally answered and tired people will be able to hand the baton to the stongest one...and yes..it will be sweet.

My son and I are not going hungry, we have plenty of food, it was just fruit that we ran out of and thank God we have plenty of that too. Still, I wouldn't mind if there was a woman who wanted to feed my son and I.... 1dsz5h2.gif

LOL! Ok Don, here ya go :

An easy apple snack cake with cinnamon, sugar, fresh sliced apples, and a brown sugar and butter topping.

INGREDIENTS:

1 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1/4 cup shortening
1 egg
1/4 cup milk
2 1/2 cups peeled, cored apple slices
.
Topping:
3/4 cup light brown sugar, packed
3 tablespoons butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

PREPARATION:

Into a mixing bowl, sift together the flour, baking powder, salt, and granulated sugar. Add shortening, egg, and milk; beat with electric mixer until blended, about 1 1/2 minutes.
Spread this batter in a greased and floured 8-inch square baking pan. Arrange apple slices over the batter, sharp inner edges down, overlapping as needed.

Combine topping ingredients; sprinkle over apple slices. Bake at 375° for 40 to 45 minutes, until apples are tender and topping is browned. Serve warm with ice cream or sweetened whipped cream.

Thank you zeetz, I'm going to try that recipe. And I'm going to make apple pie and apple cider and freeze some for later in the winter. What wonderful gifts God gives us.

Don....this thought just came to me... YOU ARE THE APPLE of the Fathers eye! We all are. The apples were a sweet way of Him reminding you of this FACT. What a wonderful Thanksgiving you will have...I just know it brother!

I have told Don for a few years now.... His future honey is going to be the blessed woman ever! I can guarantee you that! What a sweet spirit you have!

Thank you for sharing you story Don. I tell you what brother.... you need to write a book with all the wonderful stories you tell. There are not many that can tell a story like you my friend. You could combine your stories with your poetry and it would make for a great collection!
